I'm a firm believer in that if you look after your people, they'll look after your customers. Having opened a brand new Delivery restaurant, I had to ensure that I got it right first time. That's why I needed people who were very, very self motivated.
The reason why I say that is because a Delivery outlet is a real hive of activity. You deal with far less people, and there are fewer components to your business, but it's very hands-on as well. Luckily, the relationship I've built with my team means they have the freedom to become a lot more creative."
